Pancake Eclair Stack

Eclairs are made by spreading homemade vanilla cream between each layer of your stack of pancakes. Yummy! The ingredients make a lot of vanilla cream so you may want to cut those ingredients in half if you will make only a few pancakes.

Ingredients

8 oz whipped cream cheese

2 (3 ½ oz) packages vanilla pudding mix
¾ cup milk
12 oz thawed Cool Whip
Drop of vanilla extract
Powdered sugar
Whipped topping
Chocolate syrup (you may substitute with chocolate icing as pictured but the syrup is so much better)
Mrs. Butterworth’s Pancake Mix

Vanilla Cream Directions

1. In large mixing bowl, mix dry pudding, cream cheese and vanilla together (this is about the consistency of cookie batter so be sure to keep your beaters cleaned off….looks like scrambled eggs after mixing)

2. Beat in milk (looks like thick pudding after mixing)

3. Stir in Cool Whip then beat on low (with clean beaters) for about 2 minutes (this will be slightly thinner than icing when finished)

After hand stirring

After beating with the mixer

4. *Refrigerate or use immediately

Pancake Éclair Directions

1. Make pancakes according to directions on box

2. Spread vanilla cream between each pancake layers (add as many layers as YOU desire)

3. Sprinkle with powdered sugar and drizzle chocolate syrup on top

4. Squirt whipped topping on top (I forgot to get a picture of that)

5. Serve

*Store any leftover vanilla cream in refrigerator if you plan to make more Pancake Éclairs or a cake in the next few days. Keep in mind that most of your ingredients do have expiration dates so this won’t store very long.

Wow! It has been a while since I've had time to post to this blog. So sorry about that. Life is extremely busy with summer activities (mowing), homeschooling (well we did get a two month break from lessons but I had to prepare us for high school classes so I never noticed the two month break), housework, writing, new gmail group for us ladies (you should join us http://groups.google.com/group/e-craft-classes?pli=1), still promoting http://www.ecraftclasses.com/, sewing when there's time to do so, and no vacation. I guess now is as good a time as any to update you on my Quick Tips section in Creative Times Magazine.

I have had a horrible time trying to get my Quick Tips ready for the September issue of Creative Times Magazine. Too much other stuff on my mind I guess. But I finally came up with the eight that I needed and eight that I'm really proud of. Four are sewing tips and the other four are health and beauty tips that should be helpful for the upcoming fall and winter months. Hotdog Sandwiches

Ingredients:

1 ½ to 2 hotdog wieners per sandwich
2 slices of toast
Shredded cheddar cheese
Chili
Onion – diced
Condiments

Directions:
Cut hotdogs in halfFry hotdogs
Place 3 or 4 halves on one slice of toasted bread

Cover with chili

Sprinkle cheese and onion over chili

Top with favorite condiments

Top with second slice of toasted bread

Pillsbury Cookie Wreath Recipe

I found this recipe on http://www.pillsburybaking.com/products/default.aspx. Just click on the pictures. You'll eventually find the cookie wreath video and lots of other fun recipe videos. I love visiting their site! And I love their products.

Because the video is a little vague, I did write clearer instructions and have included those below. All credit goes to Pillsbury; I just needed clearer instructions to follow so I'm sharing those here along with a few step-by-step pictures I took of my own progress.

One of the finished cookie wreaths I made using Santa faces as a decoration.

Another cookie wreath I made using red icing to create the "berries".

Pillsbury Cookie Wreath

Ingredients:
1 box Pillsbury Funfetti sugar cookie mix
1 egg
1 stick of margarine (room temperature)
2 – 3 cans of Pillsbury Easy Frost or Betty Crocker Easy Flow green decorating icing
1 Fruit by the Foot
(optional) decorating candy

Instructions:

Make cookie dough as directed on the box. This takes some time to stir as the ingredients are very thick.
Place dough in refrigerator for about 30 minutes.
Pre-heat oven to 350 degrees.
Make 9 dough balls as close to the same size as possible.
Place dough balls evenly spaced in a circle around an ungreased pizza pan about ½” from the edges.
Place in oven until the balls flatten and the edges are golden brown.
You’ll want to keep a close eye on this but it usually takes about 20 – 30 minutes.
Remove from oven and cool.
Follow instructions on the decorating icing can to “squeeze” stars onto the cookie.
Once the cookie is covered with green stars, cut your Fruit by the Foot into sections as follows: (2) 4” sections folded in half to create the bow loops, (1) 2” section to wrap around and hide the center of the bow loops, and (1) 6” section, cut the swallowtail on each end of this piece, then crisscross to form the bottom of the bow.
Place the bottom of the bow near the middle of the top part of the wreath.
Place the top part of the bow on top of that.
Randomly add selected candy or red icing to the wreath.
Refrigerate overnight to set the icing if you so desire.

Mama's Breakfast Bowls

Ingredients
3 - 4 cups of diced potatoes
8 medium eggs
12 slices of bacon (pre-cooked shrinks less and is crispier)
2 cups finely shredded cheddar cheese

Directions
Fry potatoes and drain
Scramble the eggs
Cook bacon until crispy

Cover the bottom of each bowl with the potatoes.
Next add the eggs.
Top with crumbled bacon and shredded cheese

Serves 4
For each additional person, fry another cup of diced potatoes and 3 slices of bacon, and scramble 2 additional eggs. A larger package of shredded cheese may also be necessary depending on how much is required for individual taste.

I cross stitched this piece a few years back and have had it displayed behind glass doors. Item is in excellent condition. I had the item propped in a corner on the shelf but you could easily add a hanger of some sort to display on your wall. Lace and ruffle have been glued in place to frame the cross stitched area. The aida cloth was taped to the cardboard on the back.

Irish Settlers of Appalachia

With St. Patrick's Day arriving shortly, and being of Irish descent myself, I was curious about the Irish settlers of our lovely region. Scots-Irish left their homeland and headed to Boston in 1717 because of English laws and failed crops. Mass migrations of these Celts to New York, Pennsylvania, Delaware, and South Carolina occurred between 1717 and 1776. Many could afford the trip only by selling themselves as indentured servants - a type of slavery that lasted four to seven years.

This is the group of people that we think of as frontiersmen, pioneers, mountaineers and hillbillies. Many still have stereotyped us as backwards and uneducated people thanks to such television shows and movies as the "Beverly Hillbillies" and "Deliverance". We have cable, internet, cell phones, malls, local grocery stores, public schools, highly acclaimed colleges and universities, and post offices just like the rest of the world. LOL! As a matter of fact we live in some of the largest and sophisticated U.S. cities on the map. So don't be fooled by the way Hollywood has protrayed us in theater and television.

Continueing on the early life, they learned to live in the rugged regions of Appalachia quickly having lived in similar areas in Ireland. They were also able to co-exist with the Native Americans. Daniel Boone, Davy Crocket and Sam Houston are three of the most famous early descendants of these people.

The Scots-Irish were forced to settle west of the Appalachian mountains after they completed their indentured servant services and formed the first independent government of America in Watauga in what is now Tennessee. There is a big Celtic celebration (bagpipe concerts and craft fairs seem to be the most common) each year in East Tennessee in honor of this early settlement. Traditional folk songs can still be heard in the Bluegrass music of the region today.

Many signed the U.S. Constitution, fought in the Revolutionary War, volunteered to fight for any good cause (remember the Alamo?), all Presidents from Tennessee were of Scots-Irish descent. Nine other presidents have traced their ancestry to the Ulster region of Northern England from which the Scots-Irish of the Appalachia fled. Tennessee's nickname is The Volunteer State and that is where the bulk of the volunteers came from, including Davy Crocket and Sam Houston, who fought at the Alamo. Many became commanders for both the Union and the Confederates - Robert E. Lee for example.

I hope you have enjoyed today's brief history lesson of my ancestors.

Easy Chicken Salad

This is the best and easiest chicken salad I have ever had.

Ingredients:
Bag of frozen chicken breast (You could of course use fresh chicken as well)
Sweet Relish
Miracle Whip
Onions (optional)

Directions:
Boil frozen chicken breast until tender.Cool and shred with your fingers.
Add miracle whip, sweet relish and chopped onions to taste.
Mix and serve on crescent rolls.

This recipe is from Bridgett. She made this for a church gathering and it was awesome! I have had many compliments on this quick and easy recipe since beginning to make it.

Appalachian Mountain Lore

I had a few minutes to conduct some research this morning and ran across some of the folklore that Appalachian Mountain folks used to live by. Some are a little silly, but some made a whole lot of sense - meaning there was some scientific meaning mingled in there somewhere. Below are my favorites.

Of course the one I found to be most interesting was the one stating that one will have bad luck if she sews on Saturday unless she finishes the job. I do a lot of sewing on Saturday without finishing the job.

Yes, it's bad luck if a black cat crosses your path UNLESS it crosses from right to left.

I wonder if putting a handful of salt on your head will really cure a headache. Sometimes mine hurts so bad that I'd about be willing to try that.

There will be a snow for every fog in August. I still use this one. ; ) It makes sense but it isn't the best forecasting method. It may have been more reliable before global warming though.

Thunder in February means frost in May; I hope I can remember that one.

Abundant growth of nuts and berries means that you'll have a severe winter. That makes so much sense to me, however there aren't many nuts and berries (to test that theory) where I live in the suburbs.

I hope to find lots more lore and beliefs to share with you soon.

Sweet Cheese Ball

Ingredients:
8 oz. cream cheese
¼ cup butter (Both softened)
1 small box of vanilla instant pudding mix
3 tablespoons confectioners’ sugar
15 oz. can of crushed, drained pineapples
Pecan Dust (recipe to follow)
Cinnamon graham crackers

Directions:
Cream cream cheese and butter together in medium size bowl. Add pudding mix, confectioners’ sugar and pineapples (drained). Dump into a round bottom bowl lined with plastic wrap to form a ball shape. Chill in refrigerator for at least 1 hour. Take out a few times taking your hands and forming the ball more and more with the plastic wrap and return to bowl. Handle as little as possible. Roll in pecan dust or pecan powder. Serve with cinnamon graham crackers. (Recipe per Roberta….Thank you!!)

Pecan Dust or Powder: Take 1 cup of pecans, whole or chopped, and put into an electric chopper and manually chop for just a minute or two. (Caution: Do not over chop) This will form a very small chunky/fine dust that you roll cheese balls in.

About the Mountain Range Itself

The Appalachian Mountains have the fourth oldest remaining European place-name in the U.S. They were named after a Native American village in Tallahassee, FL whose name was transcribed as Apalchen or Apalachen. The Spanish altered the name to Apalachee and applied the name to the region north of the Native American village as well. Eventually the spelling as we know it today became permanent.

After the de Soto expedition in 1562, the name was used for the part of mountain range. However, it was the late 19th century before the name was used for the entire mountain range which had at times been called the Allegheny Mountains, Alleghenies or Alagania.

We southerners pronounce the name with "latch" in the 3rd syllable. The northern pronunciation of the 3rd syllable is "lay" and the last syllable will begin with either "ch" or "sh" depending on the individual.

My research also mentioned that Washington Irving suggested renaming the United States to Appalachia or Allegania. Some of our research may also take us into the southeastern region of Canada. I hope we'll also be able to discuss some of the individual mountains along the range during this ongoing research of our historical region.

Cherokee Research

I am very curious about all the Native Americans of the Appalachian region, however I have a particular interest in the Cherokee because my husband has been told that he is part Cherokee. He does have the darker skin tone, black hair and beautiful brownish - hazel eyes. So it is very plausible that he has Cherokee blood running through his veins.

Interestingly in my research, I discovered that the Cherokee have been known by many different names. The name Cherokee was actually derived from the Creek word Chelokee meaning "people of a different speech". The Cherokee referred to themselves as Ani-Yunwiya "real people". They originated from the northern Iroquois tribe and travelled southward along the Appalachian and settled in eastern Kentucky and Tennessee, western North Carolina and Virginia, Southern West Virginia, South Carolina , Georgia, and northeastern Alabama. Their northern brethren often referred to them as Entarironnen "mountain people" or Oyatageronon "cave people".

Orange Juice Cake

Ingredients:
1 classic yellow cake mix
3 oz instant vanilla pudding mix
4 eggs 1 cup orange juice (not concentrate)
½ cup oil (not olive oil)
½ cup pecans

Directions:
Preheat oven to 325 degrees Grease and flour Bundt cake pan Pour chopped nuts over bottom. Mix the remaining ingredients and pour over the nuts. Bake for 50-60 minutes checking on not to over bake. During ht least 5 minutes of baking time make the glaze to have ready to pour over cake when it comes out of the oven.

Glaze Ingredients:
1 stick butter (Blue Bonnet)
1 cup orange juice (not concentrate)
1 cup of sugar

Directions:
Heat butter and orange juice on medium to high heat while stirring to melt butter Add sugar and bring to a boil. Boil for 2 minutes and remove from heat. Pour over hot cake in pan, immediately when it is taken from the oven. Let cake cool for 30 minutes and remove cake from pan.

This is one of the most delicious and moist cakes that I have ever eaten. Recipe compliments of Minnie.

Fast Taco Salad Recipe

Ingredients
1 lb. to 1 ½ lb. ground beef
1 bag tortilla chips
1 package 1.25 oz. taco seasoning
2 jars (16 oz. each) salsa
1 can (16 oz.) refried beans
1 can chopped black olives (drained)
1 small head of lettuce
1 package shredded cheddar cheese (3 cups)
1 sour cream (16 oz. serving)

Cooking Directions
Brown the ground beef
Drain thoroughly
Add seasoning to drained meat (follow package instructions)
Heat refried beans
Place chips in center of plate
Add meat, beans, olives, lettuce, cheese, salsa and sour cream on top of chips

Makes 4-6 servings

Pork Chops with Tomato Soup

Ingredients:
2-3 pounds of pork chops (I prefer boneless but bone in works just the same)
2 green bell peppers
2 cans of tomato soup
Salt and pepper to taste

Directions:
Preheat oven to 350 degrees.
In a skillet brown your pork chops on both sides and add salt and pepper to your liking.
Transfer to a greased (sprayed) 13x9 baking dish.
Remove seeds from the green peppers and chop into small chunks.
Cover pork chops with the chunks of green peppers and then cover all with the tomato soup. Smooth out and bake in a preheated 350 degree oven for 45 minutes.
These also reheat well for leftovers.

Baked Spaghetti

Another one of my family's favorite meals is my baked spaghetti. This makes 8 servings so, once again, this is a great left-over dish for a family of four.

Ingredients
1 lb. box of spaghetti
1 lb. ground beef
4 oz package Pepperoni (dry pack)
2 lb. 13oz jar Ragu
3 cup bag shredded mozzarella cheese
Grated Parmesan cheese
13 Qt. glass dish 9.5” x 13.5” x 2”

Cooking Directions
Boil spaghetti & drain
Brown meat & drain
Add browned meat, spaghetti sauce and a layer of parmesan cheese to skillet
Stir occasionally
Bring mixture to a boil & remove from heat

Preheat oven to 450 degrees
Cover the bottom of the glass dish evenly with the drained spaghetti
Add sauce/meat/parmesan mixture over the top
Add pepperoni in a single layer across the top of the mixture
Add the package of mozzarella cheese
Bake until the cheese is melted (2 or 3 minutes)

I hand stitched 184 Czech glass white ceylon seed beads around the edges of the smaller lace and along the top and bottom edges of the larger lace. Click on pictures to enlarge. Shipping
To make ordering simpler for you, we have included who is selling each item in the descriptions of each item. This will help you to know who will be shipping your package(s). Multiple orders from each seller will be shipped in one package whenever possible. In most cases items will ship within 48 hours (2 business days).

Combined Shipping
Shipping cannot be combined for purchases from both sellers. We live in two separate states. Ü Shipping prices are provided as a visual although they are included in the total price of each item. If you wish to purchase multiple items from each seller you may Contact Us with your order and we will adjust the shipping accordingly and email you a Paypal invoice to complete your checkout. Items with free shipping will ship separately from items that include shipping.

EZ Chicken and Dumplings

As you are about to discover, I love homemade meals. BUT I need meals to be quick to make without a bunch of ingredients that are going to go bad before I can use them again. So here's my quick recipe for delicious homemade Chicken and Dumplings.

INGREDIENTS
1 lb. skinless chicken breasts or strips
1 large can cream of chicken soup
½ stick butter
4 cups broth from boiled chicken
Salt & pepper to taste
3 cups Bisquik
Milk

Boil chicken. When chicken is thoroughly cooked, set out to cool (cut into quartered pieces for breasts and halves for strips to speed the cooling process). Measure out 4 cups of broth. Pour out any remaining broth from pot and replace with the 4 cups of broth. Add soup, salt & pepper, and ½ stick of butter. Turn stove eye on high and let come to a boil while you’re making your dumplings.

To make your dumplings, mix your Bisquik with milk until moist. By now the broth should be boiling & you can cut your heat down to low. Spoon in the dumplings. After this, you can start tearing your chicken into small pieces and add them to the pot. Stir occasionally until soup thickens.

Serves 4 - 8. We have a family of four so this is a great left-over dish for us.
